Pre-heat griddle to about 400
- 2 eggs
- 1 1/2 cup buttermilk
- 3 tablespoons salad oil
- 1 1/2 cup flour
- 2 tablespoons sugar
- 1 1/2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- Beat eggs and then add the other ingredients, continuing beating until smooth
- Sprinkle a few drops of water on the griddle, when it is ready the water will dance
- Pour batter from a large spoon or 1/4 cup measure, Turn pancakes as soon as they rise
- but before any bubbles break, now bake until sufficiently brown
- Serve with drawn butter and syrup

Notes
You can do any of the following :
- add 1/2 cup of cheese to the batter for a different flavor
- substitute buckwheat flour for 1/2 the flour
- Add cooked sausage, ham, or bacon to the batter before cooking
- Substitute corn meal for 1/2 of the flour
