FRIED TENDERLOIN

 

INGREDIENTS:
2 to 3 strips of tenderloin (deer or bear)
2 to 3 onions (optional)
1 to 2 green bell peppers (optional)
1 to 2 gree onions (optional)
fresh or canned mushrooms (optional)
margarine & shortening
salt & papper (other favorite seasonings may be substituted)

 

PREPARATION:
* Clean tenderloin thoroughly, slice into approx. ¼ inch thick pieces and season lightly
* peel onions and cut into quarters or thick slices
* clean peppers and cut into large chunks
* clean and slice fresh mushrooms, or drain canned mushrooms
* clean green onions and cut into approx. 1 inch long pieces
* melt margarine and shortening in large frying pan to 350° to 375°F
* fry tenderloin pieces for about 1 (one) minute on each side at 350°F
* reduce heat to 250° to 275°F
* add onion, pepper, and green pepper pieces
* simmer meat and veggies uncovered for 20 minutes, turning all frequently
* add mushrooms and continue to simmer until meat is well done
* serve immediately (wild game meat tends to harden as it cools)

 

TIP: slice tenderloin on the previous day and marinate in refrigerator overnight
           (see "Marinated Deersteaks")
